Fresh Chunky Mango Salsa

  • two cups of frozen or fresh mango; cubes (defrost if frozen)
  • 1-2 cups of fresh cilantro
  • 2 medium sized tomatoes; chopped
  • 1/2 cup of onion; chopped
  • 1/3 cup of bell pepper; chopped
  • 1/3-1/2 cup of corn (I used raw but canned works too if you aren't strictly raw)

First pulse cilantro leaves in your food processor a few times. Add in other ingredients and pulse a couple times until blended but still chunky. Pulse more for a smoother salsa. Add to your favorite tacos, nachos, lettuce cups, salads, or just use as dip! Enjoy! xx
