Buddha Bowls

Buddha Bowls are my go-to lunch/dinner when I have veggies in the fridge and I want something super filling and satisfying. My buddha bowls usually incorporate a grain, a mixture of raw and steamed veggies, a protein or starch, and a dressing/sauce like my Roasted Red Pepper Hummus or Curried Tahini Dressing all on a bed of greens (usually romaine or baby spinach). Buddha Bowl Inspo

Grains:

  • Quinoa cooked in low-sodium veggie broth and your favorite herbs/seasonings
  • Rice steamed with saffron or turmeric
  • Organic brown rice

  • Carrots
